INGREDIENTS:
3 Cups Mixed boiled vegetables (French Beans, Green Peas, Potatoes, Carrots and Cauliflower)
2 Onions
3 Spring Onions
1-Cup Tomato Puree
4 - 5 Green Chilies
1 piece Ginger
1 tbsp Coriander Leaves
½ Cup Tomato Ketchup
1 tsp Sugar
3 tbsp Ghee
Salt to taste
METHOD:
Chop the Onion, Spring Onion (with leaves), Green Chilies, Ginger and Coriander. Keep them separately. Heat the ghee in a kadai(wok) and fry the Onions till golden. Now, add the Tomato Puree, Chilies, Ginger and Coriander and fry for at least 2 minutes. Add the Tomato Ketchup, boiled Vegetables, Spring Onions, Chili powder, Sugar, Salt and little water and cook for 5 to 8 minutes.
Serve hot with your choice of Indian Bread.
