INGREDIENTS :

500gms small Baigans (Brinjal)
3 tsp Amchur Powder (Dry Mango powder)
3 tsp Dhania - Jeera powder (Coriander and Cumin powder)
2 tsp Chili powder
1 tsp Garam Masala
4 tbsp Oil
Salt to taste

METHOD :

Baigan MasalaWash Baigan and cut 2 vertical slits with the stem intact. Soak all the cut Baigan in water. Mix all the powders together with 2 tbsp oil. Stuff each Baigan with the masala. Heat 2 tbsp Oil in a kadai(wok) and arrange the stuffed Baigan in it. Add 1 Cup Water. Cover with lid, cook on low flame till Baigan becomes soft.

Serve hot with your choice of Indian Breads.
