INGREDIENTS :
1 cup white chocolate, chopped
1 vanilla pod, split
300ml/½ pint full-fat milk
2 medium eggs
3 medium eggs, yolks only
6 slices banana loaf cake
25g/1oz unsalted butter, melted icing sugar, for dusting
Method:
Preheat the oven to 220C/425F.
Lay the cake in the bottom of a medium gratin or ovenproof dish.
Scatter the chocolate over the top.
In a medium bowl over a pan of simmering water, melt the chocolate.
In a medium pan bring the milk with the vanilla pod to simmering point.
Whisk together the eggs and egg yolks in a medium bowl. Gradually whisk in the milk.
Remove the vanilla pod and return the custard to the pan. Stir until slightly thickened.
Pour the custard over the cake slices.
Bake for 2-3 minutes.
Preheat the grill.
Dust heavily with icing sugar and grill or blowtorch to caramelize. Serve.
