It's that time of the year when Kerala dons a new colour for Onam, ringing in festivities all over the state. And the sadhya feast becomes one of the highlights. Keeping that in mind, Taj Residency has created a special lunch buffet in sync with the mood. Chef R Selvaraju, executive chef, Taj Residency, has hand-picked a menu that will have a blend of the most traditional recipes along with some contemporary dishes.
“We're even going to have a chips counter, where we'd be serving banana, jackfruit and tapioca chips that will be made fresh. And, of course, there would be a lot of the much loved desserts like the payasams and the ada pradaman,” says Chef Selvaraju.
Live appam counters with potato and chicken stew, avial, the popular puli inji, kari meen polichettu and a lot of appalams are a part of the sumptuous feast. The special lunch will be served in the traditional fashion, on the plantain leaf, while Café Mozaic will be adorned with flowers and other ornamentation to give the place an authentic feel. “Apart from the traditional sadhya delicacies, we will also have some contemporary fare on offer in the salads and dessert section. This will give our guests a wider variety to choose from,” says Chef Selvaraju.
