
Sanpada resident Bharati Mane shares two delectable mango cuisines for mango lovers. After successfully experimenting with apple nuggets, Mane decides to give mango nuggets a try and is more than happy with the results when everyone in the family complimented her for the sweet and sour dish.
Mango Paneer Nuggets
Ingredients: Mango juice - 1 cup
Paneer cubes - 250 g
Salt - to taste
Garlic paste - 2-3 flakesac
Mustard seeds paste - 1½ tsp
Red chilli powder - to taste
Bread crumbs - 3
Coriander and mint finely chopped - ½ cup
Method: Add salt, garlic paste, mustard seed paste and red chilli powder to mango juice and mix well. Drop paneer cubes in the mango mixture and leave the mixture for 10 to 15 minutes. Mix coriander, mint and bread crumbs in a separate dish. Now, take a mango dipped paneer, roll in the ready mixture and shallow fry it. Serve hot with tomato sauce or green chutney.
Mango PuddingIngredients: Mango juice - 2 cup
Marie biscuits powdered - 12
Milk - ½ cup
Curd - ½ cup
Malai - half cup
Sugar - to taste
Glazed cherries for garnishing finely chopped
Method: Add sugar, curd and malai to milk. In glass bowl, make a layer of Marie biscuits powder followed by a layer of mango juice and a layer of milk and curd. Repeat layers till the bowl is filled or the ingredients are exhausted. Garnish with glazed cheery. Allow it to set by refrigerating it for two hours. Your mango pudding is ready and you now serve it as a desert.
