You’ve had them sweet, now try them spicy. Upmarket restaurants in the city are now offering spicy desserts for those of you who want more than just a sweet ending
It takes a while to deal with — Wasabi in a cheesecake? Chilli in a chocolate brownie? Wondering what the baking world come to…? Well, that’s just the tip of the iceberg and Bangalore is only catching on to what the world is raging about — spicy desserts.
Pastry chef, Olive Beach, Tanmoy Savardekar is of the opinion that using too much spice in a dessert can actually kill the flavour. “One can use black pepper, chillies or even anise to spice up a dessert. But no one really wants to gulp water after eating a dessert, so they should be used in moderation. A slight bite towards the end is good enough. Dishes like chocolate basil pudding with a slightly concentrated anise centre can have that effect. Plus ice creams with jalapeno or green chillies, chocolate truffle spiced up with cinnamon make lovely desserts,” he says.
Not just the chilli, even the wasabi cheesecake is gaining rapid popularity in the city. From the Sushi brunch at Zen to Lido at Hotel Ista have it on their menu.
OKO at Lalit Ashok offers something called the wasabi chocolate mousse as well. “The wasabi is the only dessert that has been retained for the last two changes our menu has gone through. It’s quite popular. The best thing about a wasabi cheesecake is that the sharpness of it balances the mellowness of cream cheese perfectly. And here, we serve it with berry compote. So if a person finds the bite too strong, they can even it out with the sourness of the berry,” says Chef Manav Kaul of Lido.
