Vashi resident Krupa Sahasrabudhe, a final year microbiology student loves cooking during her free time. With the holiday season on, the rotis can be a nutritious delight for the children since it is easy to make while the summer drink can relieve the residents from scorching heat. The drink with no sugar is useful for health conscious people as well. 

Stuffed Potato Roti

Ingredients

  • Base: Left over rotis - 2
  • Stuffing
  • Boiled and mashed potatoes - 2
  • Black gram or chana - ½ cup
  • Grated carrot- ½ cup
  • Grated beetroot-1/2 cup
  • Green chutney or sauce
  • Finely chopped onion, cucumber, tomato, cabbage, green capsicum, spinach or coriander as required
  • Sprouts, salt and chat masala as per taste

Method:

Take a roti and spread green chutney or sauce over it. Add a layer of mashed potato and chana on the roti. Now spread all the stuffing on it. Sprinkle the salt and chat masala and apply a thin paste of mashed potato on its edges and stick another chapatti on it. Take oil or ghee on a nonstick pan and roast the roti from both the sides. The stuffed rotis are ready and can be served with sauce or dahi.

Jholiya

Ingredients

  • Raw mango 1
  • Jeera powder 1tbsp
  • Rock salt ½ tbsp
  • Mint leaves 20-25
  • Ginger ½ inch piece
  • Small piece of green chilly
  • Small lump of jaggery to taste
  • Salt as per taste
  • Three glasses of chilled water

Method:

Peel off the raw mangoes and cut it into small pieces. Add to it jeera powder, mint leaves, salt, ginger, chilly and jaggery. Grind it finely in the mixer. Take it in a bowl and add three glasses of chilled water into it. Mix the entire composition well and filter it. A cool refreshing summer drink is ready to be served.
